Spinach Puffs with Cream Cheese

Cream Cheese Spinach Puffs: The Perfect Party Appetizer

When it comes to hosting a party or gathering, having a repertoire of delightful and easy-to-make appetizers is essential. One of my all-time favorites is Cream Cheese Spinach Puffs. These little pockets of goodness are not only visually appealing but also packed with a delicious, creamy filling that is sure to impress your guests. I remember the first time I made these puffs; it was for a family holiday party. The compliments kept coming, and they quickly became a staple at all our gatherings. The combination of flaky puff pastry, creamy cheese, and nutritious spinach creates a perfect bite that is both satisfying and elegant.

Ingredients and Their Roles

1 sheet puff pastry: Puff pastry serves as the crispy and flaky shell that encases the creamy spinach filling. It’s essential to use high-quality puff pastry to achieve the best texture.

7 oz baby spinach: Spinach is the star of the filling, providing a vibrant color and a healthy dose of vitamins and minerals.

2 garlic cloves, minced: Garlic adds a depth of flavor to the spinach, enhancing its taste and aroma.

1 tbsp olive oil: Olive oil is used to sauté the garlic and spinach, bringing out their flavors and ensuring they blend well with the other ingredients.

8 oz cream cheese: Cream cheese makes the filling rich and creamy, binding the ingredients together.

1/2 cup mozzarella cheese: Mozzarella adds a stretchy, gooey texture and a mild flavor that complements the cream cheese.

1 egg: The egg is used in the filling mixture to help bind the ingredients and give structure to the filling.

1 egg yolk: Egg yolk is brushed on top of the puffs to give them a beautiful golden brown color when baked.

Pinch of salt: Enhances the flavors of the filling.

Pinch of black pepper: Adds a slight kick and balances the richness of the cheese.

Instructions

Preheat the Oven

Preheat your oven to 400°F (200°C). Line a baking tray with parchment paper to prevent the puffs from sticking and to ensure even baking.

Prepare the Spinach Filling

Heat 1 tablespoon of olive oil in a pan over medium heat. Once hot, add 2 minced garlic cloves and sauté for about 2 minutes until the garlic is soft and fragrant. Be careful not to burn the garlic as it can become bitter.

Add 7 ounces of baby spinach to the pan. Season with a pinch of salt and black pepper. Sauté until the spinach is wilted, which should take about 3-4 minutes. Remove the pan from the heat and let the spinach cool completely. This step is crucial as adding hot spinach to the cream cheese will make it too runny.

Prepare the Puff Pastry

While the spinach is cooling, take 1 sheet of puff pastry and lay it on a clean, flat surface. Cut the puff pastry into 6 or 12 squares, depending on how large you want your puffs to be. For smaller, bite-sized puffs, cut into 12 squares. For larger, more substantial puffs, cut into 6 squares. Place the cut pastry squares onto the prepared baking tray, leaving a bit of space between each one.

Mix the Filling

In a mixing bowl, combine the cooled spinach, 8 ounces of cream cheese, 1/2 cup of mozzarella cheese, and one beaten egg. Mix thoroughly until all ingredients are well incorporated. Season with an additional pinch of salt and pepper if needed. The filling should be creamy and well-mixed.

Assemble the Puffs

Divide the spinach and cheese mixture evenly among the pastry squares. Place a generous spoonful of the filling in the center of each square. Fold two opposite edges of each square towards the center, pressing them together to seal the filling inside. You can also fold all four corners towards the center to create a different shape. Make sure the edges are sealed tightly to prevent the filling from oozing out during baking.

Brush with Egg Yolk

In a small bowl, beat one egg yolk and use a pastry brush to lightly coat the tops of the assembled puffs. This will give them a shiny, golden brown finish when baked.

Bake

Bake the puffs in the preheated oven for 25 to 35 minutes, or until they are puffed up and golden brown. Keep an eye on them to prevent over-baking. The exact time will depend on your oven and the size of the puffs.

Serve

Once baked, remove the puffs from the oven and let them cool slightly on the baking tray. They are best served warm but can also be enjoyed at room temperature. Arrange them on a platter and watch them disappear quickly at your party!

Variations and Substitutions

  • Cheese Variations: You can experiment with different cheeses in the filling. Feta, goat cheese, or cheddar can be used in place of or alongside mozzarella for a different flavor profile.
  • Add-ins: For added texture and flavor, consider adding chopped sun-dried tomatoes, pine nuts, or sautéed mushrooms to the filling.
  • Herbs and Spices: Fresh herbs like dill, basil, or parsley can be added to the filling for an extra burst of flavor. A pinch of nutmeg can also complement the spinach and cheese mixture.
  • Dietary Substitutions: For a lighter version, use reduced-fat cream cheese and part-skim mozzarella. For a vegan option, use dairy-free puff pastry, vegan cream cheese, and a flax egg (1 tablespoon ground flaxseed mixed with 3 tablespoons water) in place of the egg.
