Cheesy Hamburger Potato Casserole

Burgers (that is, minced meat) and potato casserole are classics! Grandmothers and mothers everywhere had their own way of making this iconic casserole. But the main players have always been the same: ground beef, potatoes, and cheese. Lots of cheese.

This easy old fashioned burger casserole recipe is a satisfying blend of ground beef, russet potatoes, onions, garlic, cream of mushroom soup, chicken broth, heavy cream, paprika and cheddar cheese. Place the ingredients in layers in a baking dish before covering and baking until the potatoes are tender.

Instead of russet potatoes, you can use Yukon Gold potatoes. If you’re not a fan of cheddar, try mozzarella, monterey jack, colby jack, gruyere, an italian or mexican blend, or pepper jack for a little spice. Ground turkey can be substituted for ground beef. For extra nutrition, add mushrooms when cooking ground beef, onions, and garlic.

Serve this delicious recipe with a fresh vegetable salad for a complete dinner. Leftovers reheat well for dinner the next day, too. We call Leftover Night!

Ingredients

1 lb. crumbled minced meat
1 yellow onion, diced
3 to 4 pounds potatoes, peeled and sliced
8 ounces or more of shredded cheddar cheese
1 can of mixed cheddar cheese soup
12 ounces evaporated milk or whole milk
Half a cup of milk
1 teaspoon of salt
Half a teaspoon pepper

Directions:

Preheat oven to 350

Spray a 9″ x 13″ baking dish with nonstick cooking spray

In a large skillet, add the onion and minced meat and stir-fry until the meat is tender

Cut the potatoes into slices of about

Add a layer of potatoes to the bottom of the baking tray

Sprinkle with salt and pepper

Cover with about half of the meat mixture and spread evenly over the potatoes

Sprinkle with half of the grated cheese

Repeat this two more times in layers

The last layer should be the remaining cheese

In a bowl, combine the cheddar cheese soup mix, milk, and evaporated milk, and season with salt and pepper to taste

Pour the soup mixture over the potato and beef mixture

Cover the baking tray tightly with aluminum foil and place in the oven

Bake for 1 hour

Remove the aluminum foil and bake for an additional 15 minutes to decorate the cheese with a golden layer.

If the potatoes are thicker, you will have to cook the dish longer
