APPLE PIE ENCHILADAS

As the fall season approaches, bringing with it the tradition of apple desserts, I found myself pondering over what sweet treat to prepare for the upcoming family visit. With both sets of grandparents, my husband’s parents, my sisters, and our celebration for little David on the horizon, I needed something special. Despite the familiar groans at the prospect of another apple cake, I was determined to delight everyone with a twist on tradition. Thus, the decision was made: Apple Pie Enchiladas would be the star of our gathering.

This dish combines the warm, cinnamon-spiced comfort of apple pie with the novelty of being encased in a soft tortilla, all drizzled with a rich caramel sauce. It’s a perfect blend of traditional and unique, designed to impress both the young and the old at our family table.

Ingredients:

Homemade Apple Pie Filling or 1 (21 ounce) can of apple pie filling
6 (8 inch) flour tortillas
1 teaspoon ground cinnamon, plus more for topping
1/2 cup butter
1/2 cup white sugar
1/2 cup brown sugar
1/2 cup water

Instructions:

Begin by preheating your oven to 350°F (175°C) and generously buttering a 9 x 13-inch baking dish.

If necessary, warm the tortillas in the microwave to make them more pliable for rolling.

Lay out each tortilla and spoon a heaping 1/4 cup of apple pie filling off-center on each. Evenly sprinkle a dash of cinnamon over the filling.

Carefully roll up the tortillas and place them seam side down in the prepared baking dish.

In a medium saucepan, combine the butter, white sugar, brown sugar, and water. Bring the mixture to a boil, then lower the heat and simmer for 3 minutes, stirring constantly.

Pour the hot sugar sauce over the enchiladas. If you like, sprinkle a little more cinnamon on top for extra flavor.

Let the enchiladas sit for 45 minutes, allowing them to soak up the sauce.

Bake in the preheated oven for 20 minutes, or until they turn golden brown.

Serve warm, ideally with a scoop of vanilla ice cream or a dollop of whipped cream, and drizzle with caramel sauce to your heart’s content.
