Zesty Mexican Taco Meatloaf

Ingredients:

1 pound ground beef (preferably lean)
1 cup breadcrumbs
1/2 cup salsa (plus extra for topping)
1/2 cup corn kernels
1/2 cup black beans, drained and rinsed
1/4 cup diced onions
1/4 cup diced jalapeños (optional, for added heat)
1 packet taco seasoning mix
1 large egg, beaten
1 cup shredded cheese (cheddar, Monterey Jack, or Mexican blend)
Fresh cilantro, for garnish (optional)

Instructions:

Preheat your oven to 375°F (190°C). Grease a loaf pan or line it with parchment paper for easy cleanup.

In a large mixing bowl, combine the ground beef, breadcrumbs, salsa, corn, black beans, diced onions, diced jalapeños (if using), taco seasoning mix, and beaten egg. Mix until all ingredients are well combined.

Transfer the meatloaf mixture into the prepared loaf pan, pressing it down gently to form an even layer.

Spread an additional layer of salsa over the top of the meatloaf, ensuring it is evenly coated. This will add moisture and flavor to the meatloaf as it bakes.

Bake the meatloaf in the preheated oven for 45-50 minutes, or until the internal temperature reaches 160°F (71°C) and the top is golden brown.

Remove the meatloaf from the oven and sprinkle the shredded cheese over the top. Return it to the oven and bake for an additional 5 minutes, or until the cheese is melted and bubbly.

Once cooked, allow the meatloaf to rest for a few minutes before slicing. Garnish with fresh cilantro, if desired, before serving.
