White Chocolate Lemon Truffles

Ingredients:

1 cup white chocolate chips
1/4 cup butter
Zest of 1 lemon
3 tbsp. heavy whipping cream
1/2 tsp. lemon extract
2-3 drops yellow food coloring (optional)
1/4 cup powdered sugar

Instructions:

Begin by placing the white chocolate chips in a medium mixing bowl, setting them aside for later use.

In a small saucepan, melt the butter along with the vibrant zest of a lemon, infusing it with a burst of citrus flavor. Stir in the heavy cream and heat the mixture until it is just about to boil, ensuring all the flavors meld together perfectly.

Carefully pour the cream mixture through a fine-mesh sieve over the waiting white chocolate chips. Add the lemon extract and, if desired, a few drops of yellow food coloring to enhance the visual appeal. Stir the mixture until it achieves a smooth and velvety texture, ensuring all the ingredients are thoroughly combined.

Cover the bowl and place it in the refrigerator to chill, allowing the chocolate mixture to firm up for approximately 30 minutes. This step is crucial for shaping the truffles later on.
