Lemon Chicken Recipe with Butter Sauce

This Parmesan-crusted Lemon Chicken is a quick and easy recipe, ready in just 30 minutes. The zesty lemon butter sauce perfectly complements the crispy chicken, making it a delightful dish for any meal.

Ingredients

For the Parmesan Crusted Chicken:

  • 1 1/2 lb chicken breasts (2 large), patted dry
  • 1 Tbsp olive oil, for sautéing
  • 1 Tbsp parsley, chopped (optional, for garnish)
  • 1/2 lemon, sliced (optional, for garnish)

For the Egg Mixture:

  • 2 large eggs
  • 1 garlic clove, minced
  • 1/2 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp ground black pepper

For the Parmesan Breading Mixture:

  • 1 cup Parmesan cheese, grated
  • 3 Tbsp all-purpose flour

For the Lemon Butter Sauce:

  • 8 Tbsp unsalted butter
  • 2 garlic cloves, minced
  • 1/4 cup lemon juice
  • 1/4 cup chicken broth
  • 1/4 tsp ground black pepper

Instructions

Prepare the Chicken:

Slice the chicken breasts in half lengthwise and pound them gently with a meat mallet to ensure even thickness.

Make the Egg Mixture:

In a bowl, whisk together the eggs, minced garlic, Italian seasoning, salt, and ground black pepper.

Make the Parmesan Breading:

In another bowl, combine the grated Parmesan cheese and all-purpose flour.

Coat the Chicken:

Dip each chicken piece into the egg mixture, allowing any excess to drip off, then dredge in the Parmesan breading mixture. Shake off any excess.

Cook the Chicken:

Heat the olive oil in a large skillet over medium heat. Once hot, add the chicken and cook for 4-5 minutes per side, or until crispy, golden brown, and cooked through to an internal temperature of 165°F. Reduce the heat if the chicken browns too quickly.

Prepare the Lemon Butter Sauce:

In a separate saucepan, melt the butter over medium heat. Add the minced garlic and cook until fragrant, about 1 minute.

Stir in the chicken broth, lemon juice, and ground black pepper. Let the sauce simmer for about 2 minutes.

Combine and Serve:

Pour the lemon butter sauce over the cooked chicken, turning the chicken to coat it evenly.

Garnish with lemon slices and chopped parsley if desired.
