Crock Pot Beef Stew

Ingredients:

For the meat

2 tbsp flour

2 tbsp oil

1-2 tsp salt or less, depending on what kind of stock you’re using

1.5 lbs. beef stewing meat in chunks

black pepper to taste

For the gravy

¼ c red wine OR use more stock

1 tbsp maple syrup

2 tbsp Worcestershire sauce

2 c beef stock

2 large yellow onions cut into wedges

2 tsp Italian seasoning

2 cloves of garlic sliced

4 tbsp tomato paste

For the veggies

4 large celery sticks were trimmed and thickly sliced

½ lb. brown mushrooms cleaned and quartered

3 large waxy potatoes peeled and cut into chunks

½ c frozen peas no need to defrost

4 large carrots peeled, ends trimmed, and cut into chunks

Directions:

Place a large skillet on the stove and turn the heat to medium-high.

Add oil and allow it to become hot.

Add the beef cubes. Sprinkle salt, pepper, and flour. Stir and cook until brown.

Transfer the beef cubes to a 5-quart slow cooker.

Place a skillet on the stove and turn the heat to medium-high.

Add oil and allow it to become hot.

Add the garlic and onions, then sauté until aromatic and translucent.

Add the tomato paste and Italian seasoning, then cook for about a minute.

Add the red wine, then stir until well blended. Make sure to scrape the bottom of the skillet to get the browned bits.

Simmer the mixture for a minute or until thick.

Add the maple syrup, Worcestershire sauce, and stock. Stir until well blended. Allow the mixture to boil. Turn off the heat.

Move everything into the slow cooker.

Add the mushrooms, carrots, and potatoes. Stir until incorporated.

Cover and seal the slow cooker, then cook everything for about 8 hours on a low setting or 4 hours on a high setting.

Add the peas, then stir until just mixed.

Serve and enjoy!
