Creamy Chicken Stew

Ingredients:

¾ c green beans, fresh or frozen

10.5 ounces cream of chicken soup

2 large red potatoes, sliced

1 tbsp butter

1 c baby carrots

1 tbsp olive oil

1 c whole milk, don’t substitute low-fat

2 boneless chicken breasts, cut into bite-sized pieces

1 c sour cream, at room temp

2.5 tsp Italian seasoning

1 small onion, diced

½ c celery, diced

1-ounce dry ranch dressing mix

Salt/Pepper

Directions:

Stove:

Place a soup pot on the stove and turn the heat to medium.

Add butter and allow it to melt.

Add the chicken cubes, Italian seasoning, salt, and pepper. Stir and cook for a few minutes until brown. Remove the chicken from the pot.

In the same pot, add vegetable oil and allow it to become hot.

Add the veggies, then sauté for a few minutes until soft.

Put the chicken cubes back into the pot, then toss until well combined.

In a mixing bowl, add sour cream, cream of chicken soup, ranch seasoning, and milk. Stir until well blended.

Pour the mixture into the pot and stir until well blended.

Simmer everything for 45 minutes or until the potatoes are soft.

Serve with biscuits. Enjoy!

Crock-Pot:

Sprinkle Italian seasoning, salt, and pepper over the chicken. Toss until well coated.

Add the butter into the cockpit, then allow it to melt.

Add the veggies, chicken, and olive oil. Stir until well blended.

Add the ranch seasoning, milk, soup, and sour cream. Stir until well blended.

Cover the crockpot, then cook everything for about 6 to 8 hours on a low setting.

Serve and enjoy!

Instant Pot:

Press the “Sauté” button on the Instant Pot.

Add butter, olive oil, and veggies. Cook until soft.

Add 1 cup of chicken broth, then stir until well blended. Make sure to scrape the bottom of the pot to get the browned bits.

Sprinkle Italian seasoning, salt, and pepper over the chicken. Toss until well coated.

Add the chicken into the pot.

Cover and press the “Pressure Cook” button. Cook for about 8 minutes.

Add the ranch seasoning, ½ sour cream, ½ milk, and cream of chicken soup. Stir until well blended. Simmer for 5 more minutes.

Serve and enjoy!
