Ingredients:
Cake:
½ cup vegetable oil
¼ cup (1 ½ sticks), unsalted butter, melted and cooled
1 cup sugar
¾ cup brown sugar
4 eggs
2 teaspoons vanilla extract
2 cups all-purpose flour
2 teaspoons baking soda
¼ teaspoon baking powder
2 teaspoons cinnamon
½ teaspoon nutmeg
½ teaspoon salt
4 cups grated carrot
¼ cup raisins
Pecans finely chopped to ¼ cup
Frosting:
1 (8 oz.) package of cream cheese, room temperature
½ cup (1 stick), unsalted butter, room temp
1 teaspoon vanilla extract
4 cups powdered sugar
¼ teaspoon salt
Instructions:
-Preheat oven to 350o F. Lightly grease a baking sheet using butter or nonstick spray.
-Mix flour, baking soda, and baking powder in a large bowl. Add cinnamon, nutmeg, and salt.
-Mix vegetable oil, butter, brown sugar, and sugar in a large bowl.
-Continue to beat the mixture for about 3-4 minutes or until it becomes smooth and fluffy.
