Slow Cooker Pineapple Pork Loin

Ingredients
  

  • 2-3 lb pork loin trimmed of excess fat
  • 2 tbsp vegetable oil
  • Salt and pepper to taste
  • 8 cloves garlic minced
  • 1/4 cup soy sauce
  • 1/2 cup brown sugar
  • 1 can pineapple chunks with juice 23.5 ounces

Instructions
 

  • Trim excess fat from the pork loin and season it generously with salt and pepper. Set aside.
  • Heat a large pan over medium-high heat and add vegetable oil. Brown the pork loin on all sides, about 2-4 minutes per side, until a golden crust forms.
  • Transfer the browned pork to the slow cooker. Rub minced garlic over the pork. Pour in soy sauce and pineapple chunks with juice. Sprinkle brown sugar evenly over the pork.
  • Cover and cook on low for 4-6 hours for a sliceable pork loin, or 8-10 hours for a more tender, shreddable pork. Occasionally baste with juices.
  • For shredded pork, pull the pork apart with two forks, then return it to the slow cooker and cook on low for an additional hour.
  • Serve the pineapple pork loin with your favorite side dishes.

Notes

For a spicier kick, add red pepper flakes or diced jalapeño to the slow cooker. For a different flavor profile, try substituting honey or maple syrup for brown sugar, or coconut aminos for soy sauce.
