Ingredients
  

  • 1/2 cup butter softened
  • 1/2 cup sugar
  • 1/2 cup dark brown sugar
  • 2 large eggs
  • 1/4 tsp vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/4 tsp salt
  • 1 1/2 cups chopped and peeled apples about 2 medium apples
  • 1/2 cup chopped walnuts

Instructions
 

Prepare Your Baking Pan:

  • Preheat your oven to 350°F (175°C). Grease a 9-inch round baking pan with non-stick spray to ensure easy removal of the cake.

Make the Batter:

  • Cream the Butter and Sugars: Using an electric mixer, beat 1/2 cup softened butter with 1/2 cup sugar and 1/2 cup dark brown sugar until light and fluffy, about 2-3 minutes.
  • Add the Eggs and Vanilla: Beat in 2 large eggs, one at a time, then stir in 1/4 tsp vanilla extract.
  • Combine Dry Ingredients: In a separate bowl, whisk together 1 1/4 cups all-purpose flour, 1 tsp baking soda, 1 tsp ground cinnamon, and 1/4 tsp salt.
  • Mix Dry and Wet Ingredients: Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined. Do not overmix.
  • Fold in Apples and Walnuts: Gently fold in 1 1/2 cups chopped apples and 1/2 cup chopped walnuts.

Bake the Cake:

  • Spread the batter evenly in the prepared baking pan. Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.

Cool and Serve:

  • Allow the cake to cool in the pan for 10-15 minutes before slicing. Serve warm with a scoop of vanilla ice cream for an extra-special treat.

Notes
