SOUTHERN FRIED SALMON PATTIES

Ingredients:
Servings: 4
400 g salmon (loaf or fillet)
1 red pepper
1 zucchini
1 onion
1 clove garlic
80 g flour + 1 tablespoon (or more)
1 cup of water (about 20 cl)
1 teaspoon baking soda
5 cl of olive oil
Thyme + bay leaf
Split pepper or cayenne pepper
Salt and Pepper
frying oil

Instructions:

-Melting chop onion in a fry pan with olive oil.

-Adding sweet pepper. Let to cooking for 10 min; Adding chop zucchini. Adding thyme, bay leaf & chop garlic. Seasoning (salt, pepper, hot pepper to taste). Let to cook for other 10 minutes.

-Removing salmon skin & adding its cubes as well. Adjust spices. Leave to cook for another 2 to 3 minutes. At the end of cooking, add a spoonful of flour (maybe more if any juice remains) in the preparation.

-Mix the flour with baking soda in a mixing bowl. Pour water to get a quick frying mixture.

-Form small croquettes using a large spoon.

-Dip them in the mixture and then immerse them for two minutes in a bath of boiling oil to brown them.

-Drain them on paper. Serving with salad
