Slow Cooker French Onion Soup

Ingredients:

6 tbsp butter
4 large yellow onions, sliced and separated into rings
1 tbsp white sugar
2 cloves garlic, minced
½ c cooking sherry
7 c reduced-sodium beef broth
1 tsp sea salt, or to taste
¼ tsp dried thyme
1 bay leaf
8 slices of French bread
½ c shredded Gruyere cheese
⅓ c shredded Emmental cheese
¼ c freshly shredded Parmesan cheese
2 tbsp shredded mozzarella cheese

Directions:

1. Place a large pot on the stove and turn the heat to medium-high.

2. Add butter and allow it to melt.

3. Add the onions and sauté until soft.

4. Sprinkle sugar over the onions.

5. Turn the heat down to medium, then sauté for another 30 minutes or until the onions caramelize.

6. Add the garlic and sauté until aromatic.

7. Add the Sherry and stir until well blended. Make sure to scrape the bottom of the pot to get the brown bits.

8. Remove the onion mixture from the pot into a slow cooker.

9. Add beef broth and stir until well mixed.

10. Add salt, bay leaf, and thyme. Stir until well mixed.

11. Cover the slow cooker, then cook for 4 hours on a high setting or 8 hours on a low setting.

12. Place the bread slices onto a baking sheet.

13. Place them inside the broiler, then broil for about 2 minutes on each side or until toasted.

14. In a mixing bowl, add the mozzarella, Gruyere, Parmesan, and Emmental cheese. Toss until well mixed.

15. Fill each heat-proof soup crock with the onion soup. Make sure to fill each to only about 3/4 full.

16. Top each bowl with sliced bread.

17. Top each bread with 2 tbsp of the cheese mixture.

18. Arrange the bowls onto a baking sheet.

19. Place them inside the broiler, then broil for 2 minutes or until the cheese turns brown.

20. Remove from the oven and let them rest for a few minutes at room temperature.

21. Serve warm and enjoy!
