Ingredients:
4 small russet potatoes peeled and diced
1 small white or yellow onion chopped
1 c shredded carrots
1 tsp dried basil
1 tsp dried parsley
3 c chicken broth
1-lb lean ground beef
8 slices cooked bacon chopped
3 tbsp butter
¼ c all-purpose flour
2 c milk I use 2%
½ tsp salt
½ tsp black pepper
2 c shredded pepper-jack cheese or shredded cheddar cheese
Green onion chopped (for garnish)
Directions:
Step 1: In a large pot, add the potatoes, carrots, onions, parsley, dried basil, and chicken broth.
Step 2: Cover the pot with a lid and cook for 6 hours on low heat or 3 hours on high heat.
Step 3: Place a large skillet on the stove and turn the heat to medium-high.
Step 4: Add the ground beef and cook until crumbly and brown. Discard any excess grease.
Step 5: Transfer the cooked meat into the pot together with the crispy bacon.
Step 6: In the same pan, add butter and allow it to melt.
Step 7: Add flour and whisk until well mixed. Cook until golden brown.
Step 8: Add the milk, salt, and pepper. Stir until well mixed.
Step 9: Add the cheese and stir until well blended.
Step 10: Cover the pot with a lid and cook for 20 minutes or until the cheese has melted completely.
