Pasta e Fagioli Soup {Olive Garden Copycat Recipe}

I love this dish from the Olive Garden that’s why I tried to copy it. To my surprise, it tasted the same! Don’t believe me? Well, you just have to give this recipe a try and taste it yourself! Have a beautiful day, friends. Enjoy!

Ingredients:

2 tablespoons olive oil, divided

1 lb lean ground beef

1 ½ c chopped yellow onion

1 c diced carrots (about 2 medium)

1 c diced celery (about 3 stalks)

3 cloves garlic, minced (1 tablespoon)

3 (8 oz) cans tomato sauce

2 14.5 oz cans low-sodium chicken broth

½ c water, then more as desired

1 (15 oz) can diced tomatoes

2 teaspoons granulated sugar

1 ½ teaspoons dried basil

1 teaspoon dried oregano

¾ teaspoon dried thyme

½ teaspoon dried marjoram

Salt and freshly ground black pepper

1 c dry ditalini pasta

1 (15 oz.) can dark red kidney beans, drained and rinsed

1 (15 oz) can great northern beans, drained and rinsed

Finely shredded Romano or Parmesan cheese, for serving

3 tablespoons minced fresh parsley

Directions:

Place a large pot on the stove and turn the heat to medium-high.

Add 1 tbsp of olive oil and allow it to become hot.

Add the ground beef, then cook until crumbly and brown. Make sure to stir from time to time to prevent burning.

Remove the ground beef from the pot onto a clean plate. Wipe clean the pot to remove excess grease.

Add 1 tbsp of olive oil and allow it to become hot.

Add the carrots, onions, and celery. Sauté until soft.

Add the garlic and sauté until aromatic.

Add the tomato sauce, chicken broth, canned tomatoes, water, oregano, basil, sugar, cooked beef, thyme, and marjoram. Stir until well mixed. Sprinkle salt and pepper to season.

Allow the mixture to boil, then turn the heat down to medium-low.

Cover the pot with the lid and simmer for about 20 minutes. Make sure to stir from time to time.

Refer to the directions provided on the package of the pasta on how to cook it. Drain and toss the pasta into the soup.

Add the beans and stir everything until well mixed.

Simmer for one more minute, then add the parsley and stir until well mixed.

Sprinkle Parmesan cheese over each serving.

Serve and enjoy!
