FRIED POTATOES ONIONS AND SMOKE POLISH SAUSAGE

Ingredients:

1 pound cajun smoked sausage
1 pound smoked turkey sausage
2 pounds baby red potatoes, cut in half
2 large onions, cut into chunks
1 tbsp cajun spice
½ tsp salt
1 tsp Paprika
½ tsp black pepper
Olive Oil

Instructions:

-Preheat the oven to 400*

-Slice the meat into ½ inch slices

-Cut the onion into wedges or chunks

-Place the potatoes, onions and meat into a bowl

-Mix in the seasonings and the Olive Oil

-Toss to combine well

-Place on a prepared rimmed baking sheet

-Place into oven and roast for 45 minutes

-Garnish with Parsley before serving
