Easy Mexican Taco Lasagna

Ingredients:

1 lb ground beef
1 packet taco seasoning
1 cup salsa
1/2 cup water
6 flour tortillas (8-inch)
1 can (16 oz) refried beans
2 cups shredded Mexican cheese blend
1 cup sour cream
1/4 cup chopped green onions
1/4 cup sliced black olives
1 diced tomato
Fresh cilantro, for garnish

Directions:

Preheat oven to 375°F (190°C).

In a skillet over medium heat, brown the ground beef. Drain excess fat and add taco seasoning, salsa, and water. Bring to a simmer and cook until thickened, about 5 minutes.

In a greased 9×13 inch baking dish, lay two tortillas, overlapping if necessary.

Spread half of the refried beans over the tortillas, followed by half of the meat mixture, and sprinkle with 1/3 of the cheese.

Repeat the layering with two more tortillas, the remaining refried beans, the remaining meat mixture, and another 1/3 of the cheese.

Top with the final two tortillas, the sour cream, the remaining cheese, green onions, black olives, and diced tomato.

Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 5 minutes, or until cheese is bubbly and slightly golden.

Garnish with fresh cilantro before serving.
