Butterscotch Bundt Cake

Ingredients:

1 cup (2 sticks) unsalted butter, at room temperature

1–1/2 cups light brown sugar, packed

3 large eggs, at room temperature

1–1/2 teaspoons vanilla extract

2–1/4 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon salt

1 cup butterscotch chips

Glaze:

1 cup confectioners’ sugar

3 tablespoons milk

1 teaspoon vanilla extract

1 teaspoon vanilla extract

Instructions:

-Start by preheating your oven to 350 degrees F.

-In a bowl, cream together the butter and sugar until light and fluffy.

-Beat in the eggs one at a time, then stir in the vanilla extract. In another bowl, whisk together the flour, baking powder and salt.

-Gradually add the dry ingredients to the wet ingredients and mix until just combined.

-Fold in the butterscotch chips.

-Pour the batter into a greased and floured bundt cake pan and bake for 45 minutes, or until a toothpick inserted into the center comes out clean.

-Let the cake cool for a few minutes before inverting it onto a wire rack to cool completely.
