Ingredients
  

  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1/4 cup water
  • 1 can Ro*Tel diced tomatoes with chiles drained
  • 1 can nacho cheese soup
  • 1/4 cup sour cream
  • 1 cup cheddar cheese grated
  • 12 8-inch soft tortillas
  • guacamole for topping, optional
  • cilantro chopped, for garnish, optional
  • sour cream extra, for topping, optional

Instructions
 

  • Preheat oven to 350°F (175°C).
  • Spray a 9×9-inch baking dish with non-stick cooking spray.
  • In a large skillet over medium heat, cook ground beef until browned, about 7–10 minutes. Drain excess grease.
  • Stir in taco seasoning and 1/4 cup water. Cook for 2 minutes, then remove from heat.
  • In a mixing bowl, combine drained Ro*Tel, nacho cheese soup, and sour cream. Add seasoned beef and mix well.
  • Layer 3 tortillas in the bottom of the prepared dish. Spread 1/3 of the meat mixture over them. Repeat two more times, finishing with a final tortilla layer.
  • Top with grated cheddar cheese.
  • Bake for 20 minutes until hot and bubbly.
  • Let cool slightly, then garnish with cilantro, guacamole, and extra sour cream if desired. Serve warm.

Notes

For a lighter version, use ground turkey and low-fat cheese. Add black beans or corn for extra texture and flavor.
