12ozpink salmoncanned, drained and flaked
2whole eggs
1/4cuponionchopped
1/4cupbell pepperchopped
2tbspyellow cornmeal
1/2tspsalt
1/2tspgarlic powder
2tbspmayonnaise
1tspWorcestershire sauce
1tsphot saucee.g., Texas Pete
1/2tspground black pepper

Instructions
Drain the salmon well and remove any large bones if desired. Flake the salmon into a large mixing bowl.
Add eggs, onion, bell pepper, cornmeal, salt, garlic powder, mayonnaise, Worcestershire sauce, hot sauce, and black pepper to the bowl. Mix in crumbled bread.
Mix ingredients gently. If too wet, gradually add flour until thickened.
Divide the mixture into 4 portions and shape each into a 1/2-inch thick patty.
Heat a skillet over medium heat with enough shortening or oil. Fry patties for 4-5 minutes on each side until golden brown.
Drain on paper towels and serve warm.
