Ingredients
  

  • 12 oz pink salmon canned, drained and flaked
  • 2 whole eggs
  • 1/4 cup onion chopped
  • 1/4 cup bell pepper chopped
  • 2 tbsp yellow cornmeal
  • 1/2 tsp salt
  • 1/2 tsp garlic powder
  • 2 tbsp mayonnaise
  • 1 tsp Worcestershire sauce
  • 1 tsp hot sauce e.g., Texas Pete
  • 1/2 tsp ground black pepper
  • 1 slice white bread crumbled
  • 1/4 cup flour added slowly, as needed to adjust consistency
  • shortening or oil for frying

Instructions
 

  • Drain the salmon well and remove any large bones if desired. Flake the salmon into a large mixing bowl.
  • Add eggs, onion, bell pepper, cornmeal, salt, garlic powder, mayonnaise, Worcestershire sauce, hot sauce, and black pepper to the bowl. Mix in crumbled bread.
  • Mix ingredients gently. If too wet, gradually add flour until thickened.
  • Divide the mixture into 4 portions and shape each into a 1/2-inch thick patty.
  • Heat a skillet over medium heat with enough shortening or oil. Fry patties for 4-5 minutes on each side until golden brown.
  • Drain on paper towels and serve warm.

Notes

For extra flavor, consider adding fresh herbs like parsley or dill to the mixture.
