Ingredients
  

  • 4 bone-in pork chops about 1-inch thick
  • Salt and pepper to taste
  • 1 tablespoon vegetable oil
  • 1 large onion thinly sliced
  • 3 cloves garlic minced
  • 3 tablespoons all-purpose flour
  • 1 ½ cups milk
  • 1 cup chicken broth
  • 2 pounds potatoes thinly sliced
  • 1 cup shredded cheddar cheese
  • 1 teaspoon paprika
  • Fresh parsley chopped (for garnish)

Instructions
 

Preheat the Oven:

  • Preheat your oven to 350°F (175°C).

Prepare the Pork Chops:

  • Season pork chops with salt and pepper. In a large skillet, heat vegetable oil over medium-high heat. Brown the pork chops for 3-4 minutes per side. Set aside.

Make the Onion and Garlic Mixture:

  • In the same skillet, cook sliced onion and minced garlic until onions are translucent.

Prepare the Sauce:

  • Sprinkle flour over the onion mixture. Stir for 1 minute to create a roux. Gradually whisk in milk and chicken broth, cooking until the sauce thickens.

Assemble the Casserole:

  • Layer half the sliced potatoes in a large casserole dish. Spoon half the sauce over the potatoes and sprinkle with ½ cup cheddar cheese. Repeat with the remaining potatoes, sauce, and cheese.

Add the Pork Chops:

  • Place the browned pork chops on top of the potatoes.

Bake the Casserole:

  • Cover the dish with foil and bake for 1 hour. Remove the foil and bake for an additional 15-20 minutes until the top is golden brown.

Rest and Serve:

  • Let the casserole rest for 10 minutes. Garnish with chopped parsley before serving.
