Ingredients
  

  • 1 pound ground beef 85% lean; swap for ground turkey if preferred
  • 1 small yellow onion finely chopped
  • 2 garlic cloves minced
  • 1 cup tomato sauce
  • 1/2 cup ketchup
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon brown sugar packed
  • 1 teaspoon smoked paprika optional
  • Salt and pepper to taste
  • 2 pounds russet potatoes peeled and cubed
  • 4 tablespoons unsalted butter divided
  • 2/3 cup milk whole or 2%; almond milk also works
  • 1/2 cup shredded cheddar cheese optional
  • Fresh parsley chopped, for garnish

Instructions
 

  • Heat your oven to 375°F. Grease a 9x9-inch baking dish with butter.
  • Boil potatoes until fork-tender, then mash with butter and milk. Season with salt and pepper.
  • Cook ground beef, onion, and garlic until no longer pink. Drain excess fat.
  • Combine tomato sauce, ketchup, Worcestershire sauce, brown sugar, smoked paprika, salt, and pepper with the beef. Cook until thickened.
  • Spread Sloppy Joe mixture in the baking dish. Top with mashed potatoes.
  • Optional: Sprinkle cheddar over the mashed potatoes.
  • Bake at 375°F for 20 minutes or until bubbly and golden brown.
  • Let it sit for 5 minutes before cutting. Garnish with parsley and enjoy!

Notes

Assemble earlier, refrigerate, then bake when you’re ready. Portion into single servings for lunchboxes or quick dinners on demand. Store leftovers in the refrigerator for up to 3-4 days or in the freezer for up to 2 months.
