Ingredients
  

  • 2 cups cooked rice preferably day-old
  • 2 eggs beaten
  • 2 tbsp vegetable oil divided
  • 1/2 cup mixed vegetables e.g., diced carrots, peas, corn
  • 2 cloves garlic minced
  • 2 tbsp soy sauce
  • Salt and pepper to taste
  • Optional garnishes: chopped green onions sesame seeds

Instructions
 

Prepare Ingredients

  • If using fresh rice, spread it out on a baking sheet to cool. Dice vegetables and mince garlic.

Cook the Eggs

  • Heat 1 tbsp of oil in a large skillet over medium heat. Add beaten eggs and scramble until fully cooked. Remove and set aside.

Sauté Garlic and Vegetables

  • In the same skillet, add the remaining oil. Sauté garlic for 30 seconds until fragrant. Add mixed vegetables and stir-fry for 2-3 minutes until tender-crisp.

Add the Rice

  • Add the rice to the skillet. Break up any clumps and stir-fry for 2-3 minutes until the rice is heated through and slightly crispy.

Incorporate Eggs

  • Push rice to the side, add scrambled eggs, and mix them into the rice and vegetables.

Season and Serve

  • Drizzle soy sauce over the rice, season with salt and pepper, and stir-fry for another 2-3 minutes. Garnish with green onions and sesame seeds if desired.

Notes

For extra protein, add cooked chicken, shrimp, or tofu. Adjust seasoning and vegetables to taste.
