Ingredients
  

  • 1 lb ground beef 85/15 lean; or substitute ground turkey or plant-based crumbles
  • 2 tbsp taco seasoning store-bought or homemade
  • 8 small corn tortillas soft; or use flour tortillas
  • 1 tbsp vegetable oil or avocado oil
  • 1/2 cup onion finely chopped
  • 1 clove garlic minced
  • 1/4 cup water for saucier filling
  • 1 cup cheddar cheese shredded or Mexican blend
  • 1 cup lettuce shredded iceberg or romaine
  • 1 medium tomato diced
  • 1/4 cup cilantro chopped (optional)
  • 1 lime cut into wedges
  • Salsa, guacamole, sour cream for serving
  • Salt and pepper to taste

Instructions
 

  • Warm oil in a skillet over medium-high heat until it shimmers.
  • Add onion and cook 2 minutes until soft; stir in garlic and cook 30 seconds.
  • Crumble in ground beef, season with salt, pepper, and taco seasoning, and cook until no pink remains.
  • Pour in water, stir gently, and let simmer 2–3 minutes so spices coat the meat.
  • Heat tortillas in a dry skillet or directly on a gas flame for 10 seconds per side.
  • Fill each tortilla with beef, top with cheese, lettuce, tomato, and cilantro; squeeze lime over everything.
  • Add salsa, sour cream, or guacamole as desired; serve immediately and enjoy.

Notes

For extra crunch, crisp tortillas in oil before filling. Leftover beef freezes beautifully—defrost in fridge overnight.
