Ingredients
  

  • 1 package sausage of choice 14 ounces, sliced
  • 3 cups potatoes diced or sliced
  • 1 onion sliced
  • 2 tbsp olive oil
  • 1 tsp Italian seasoning
  • 1 tsp dried basil
  • 1 tsp dried parsley
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • 1/4 tsp dried thyme
  • 4 tbsp unsalted butter divided into portions
  • 2 cups carrots sliced, optional

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • In a large bowl, combine sliced sausage, potatoes, onion, and carrots if using. Drizzle with olive oil and toss to coat.
  • Mix Italian seasoning, basil, parsley, paprika, garlic powder, and thyme in a small bowl. Sprinkle over the sausage and potato mixture and toss to distribute evenly.
  • Cut four pieces of aluminum foil (12 inches each). Divide the mixture among the foil pieces and add small portions of butter to each.
  • Fold the foil sides over the mixture to create packets and seal tightly. Arrange on a baking sheet.
  • Bake for 25-30 minutes. Check for doneness; if needed, bake an additional 5-10 minutes until potatoes are tender.
  • Carefully open packets and serve directly from the foil or transfer to plates. Garnish with fresh parsley if desired.

Notes

For a smoky flavor, grill the foil packets over medium heat for 20-25 minutes instead of baking.
