Ingredients
  

  • 1 lb smoked sausage sliced
  • 3/4 lb fresh green beans trimmed
  • 1 lb red potatoes cut into 1” chunks
  • 1 medium onion wedged
  • 2 tsps olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 1/2 tsp garlic powder

Instructions
 

  • Preheat the oven to 425°F (220°C).
  • Slice the smoked sausage into bite-sized pieces, trim green beans, cut potatoes into 1-inch chunks, and wedge the onion.
  • In a large bowl, combine sausage, green beans, potatoes, and onion. Add olive oil, salt, pepper, and garlic powder. Toss to coat evenly.
  • Transfer the mixture to a 9x13-inch baking dish and cover with aluminum foil.
  • Bake covered for 30 minutes, then remove the foil, stir, and bake uncovered for an additional 10–15 minutes until vegetables are caramelized and sausage is crispy.
  • Remove from oven and let sit for a few minutes before serving. Enjoy!

Notes

This casserole is perfect for meal prep and makes great leftovers. Pair with a fresh salad or top with fried crispy onions for added texture.
