Ingredients
  

For the Steaks:

  • 1/3 cup breadcrumbs
  • 1 egg
  • 1 small yellow onion grated
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 lb. lean ground beef 90/10
  • 1 tablespoon extra-virgin olive oil

For the Mushroom Gravy:

  • 2 tablespoons butter
  • 8 oz. mushrooms sliced (baby portobellas or cremini)
  • 2 tablespoons all-purpose flour
  • 2 cups beef broth
  • Kosher salt to taste
  • Black pepper to taste

Instructions
 

Preparing the Steaks:

  • In a large bowl, mix grated onion, breadcrumbs, egg, kosher salt, and black pepper.
  • Incorporate the ground beef into the mixture using your hands until just combined.
  • Divide the mixture into four portions and shape into oval patties, about 3/4-inch thick.
  • Preheat a large skillet over high heat, then add olive oil to coat.
  • Cook the patties for 2 minutes on each side until browned. Transfer to a plate to rest.

Making the Mushroom Gravy:

  • In the same skillet, melt the butter and cook the mushrooms until golden.
  • Sprinkle flour over the mushrooms, stirring constantly to form a roux.
  • Gradually stir in the beef broth and bring the mixture to a simmer.
  • Return the patties to the skillet and simmer for 5 minutes until the gravy thickens.
  • Adjust seasoning with kosher salt and black pepper as needed.

Notes

For a dairy-free version, substitute butter with olive oil. To make it gluten-free, use gluten-free breadcrumbs and cornstarch instead of flour. Add a splash of white wine or fresh herbs for an extra flavor boost.
