  • In a large mixing bowl, combine 1 pound ground sausage, 8 ounces softened cream cheese, 1 can (10 ounces) Rotel diced tomatoes and green chilies (drained), 2 cups shredded cheddar cheese, 2 cups biscuit baking mix, 1/2 teaspoon garlic powder, 1/2 teaspoon onion powder, and 1/4 teaspoon black pepper. Mix well until all ingredients are thoroughly combined.
  • Shape the mixture into 1-inch balls using your hands. Arrange the sausage balls on the prepared baking sheet, spacing them about 1 inch apart.
  • Bake in the preheated oven for 20-25 minutes, or until the sausage balls are golden brown and cooked through (internal temperature should reach at least 160°F or 71°C).
  • Let the sausage balls cool slightly on the baking sheet before transferring them to a serving platter.
