Ingredients
  

  • 2 1/2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 tsp cocoa powder
  • 1 1/2 cups vegetable oil
  • 1 cup buttermilk at room temperature
  • 2 large eggs at room temperature
  • 2 tbsp red food coloring
  • 1 tsp white distilled vinegar
  • 1 tsp vanilla extract
  • 1 tsp purple food coloring or more as needed for desired color
  • 1 pound cream cheese softened
  • 1 cup unsalted butter at room temperature (2 sticks)
  • 1 tsp vanilla extract
  • 4 cups sifted confectioners' sugar

Instructions
 

  • Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  • In a medium bowl, sift together flour, sugar, baking soda, salt, and cocoa powder.
  • In a large bowl, whisk together vegetable oil, buttermilk, eggs, red and purple food coloring, vinegar, and vanilla until smooth.
  • Gradually mix dry ingredients into the wet mixture until the batter is smooth. Avoid overmixing.
  • Divide batter evenly between prepared pans. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean. Cool cakes in pans for 10 minutes, then transfer to a wire rack to cool completely.
  • Beat cream cheese, butter, and vanilla in a large bowl until smooth and creamy. Gradually add sifted confectioners’ sugar, beating until fluffy (about 5-7 minutes).
  • Place one cake layer on a serving plate, frost the top, then place the second layer on top. Frost the top and sides of the cake evenly. Use a spatula or cake scraper for a smooth finish.

Notes

For a deeper purple, adjust the amount of purple food coloring as needed. Make sure cream cheese and butter are at room temperature for the smoothest frosting. Substitute cake flour for all-purpose flour for a lighter, tender crumb.
