Ingredients
  

  • 2 cups pecan halves fresh, preferably raw
  • 1 cup lightly salted peanuts substitute almonds or cashews for a twist
  • 4 cups whole-grain rice cereal like Barbara's Puffins for extra nutty taste
  • 2 cups mini pretzels twists or rods; look for no-salt versions if you prefer less salt
  • ¾ cup unsalted butter or use coconut oil for a dairy-free option
  • 1 cup light brown sugar light or dark both yield a tasty caramel
  • ¼ cup honey or pure maple syrup adds depth and a slightly floral note
  • 1 teaspoon pure vanilla extract Madagascar vanilla gives the best aroma
  • ½ teaspoon kosher salt plus extra for sprinkling
  • 1 cup semi-sweet chocolate chips optional, but seriously tasty
  • 2 cups popped popcorn plain, air-popped; optional filler for a lighter mix

Instructions
 

  • Line a large baking sheet with parchment paper.
  • Melt butter with brown sugar and honey in a saucepan, stirring until caramel-like. Stir in vanilla extract and salt.
  • Pour caramel over pecans and peanuts, then mix in cereal, pretzels, and popcorn.
  • Sprinkle chocolate chips over the mix and fold them in once softened.
  • Spread the mix on the baking sheet, let set, then break into clusters and serve.

Notes

Make sure nuts and cereal are at room temperature before mixing to prevent sogginess. Customize by adding dried fruit or coconut flakes.
