Instructions
 

  • Preheat your oven to 500°F (260°C). Prepare your roasting pan or baking dish.
  • Generously season the eye of round roast with salt, pepper, garlic powder, and onion powder, ensuring even coverage on all sides.
  • Place the seasoned roast in the preheated oven. Immediately reduce the temperature to 475°F (245°C). Roast for 21 minutes (seven minutes per pound).
  • After 21 minutes, turn off the oven and let the roast sit in the residual heat for 2 1/2 hours. Do not open the oven door.
  • After 2 1/2 hours, check the internal temperature; it should be at least 145°F (65°C) for medium-rare. Leave in the oven longer if you prefer it more well-done.
  • Slice the roast into thin pieces and serve.
