Ingredients
  

  • 2 cans 14 oz each sauerkraut, undrained
  • 5-6 potatoes peeled and cut into large chunks
  • 1 cup water
  • 1 lb Polish sausage cut into chunks
  • 1 tsp caraway seeds
  • 1 bay leaf
  • 1/4 tsp pepper

Instructions
 

  • Prepare the Ingredients: Gather all ingredients. Peel and chop the potatoes.
  • Assemble in Slow Cooker: Layer the sauerkraut and potatoes in the slow cooker. Sprinkle with caraway seeds, add the bay leaf, and season with pepper. Pour water over the ingredients.
  • Add the Sausage: Place sausage chunks on top of the sauerkraut and potatoes.
  • Cooking Process: Cook on high for 4 hours or low for 6 hours, until the potatoes are tender and flavors meld together.
  • Adjust Seasoning: Taste and adjust seasoning if needed. Optional: Add a dash of paprika or more pepper.
  • Serve: Remove the bay leaf and serve hot in bowls.

Notes

For a lighter version, substitute traditional sausage with turkey or chicken sausage.
