  • 1/2 cup brown sugar packed
  • 1/2 cup corn syrup
  • 1/4 cup unsalted butter melted

  • 2 large eggs
  • 1/2 cup semi-sweet chocolate chips
  • 1 tbsp vegetable oil

  • Grease a mini muffin tin. Spoon 1 tablespoon of brownie batter into each cup, then add 1 teaspoon of pecan pie filling. Top with another tablespoon of brownie batter.
  • Bake for 20-25 minutes or until set and a toothpick inserted into the center comes out clean.
  • Melt chocolate chips with vegetable oil in a microwave-safe bowl in 30-second intervals, stirring until smooth.
  • Allow the brownie bombs to cool, then drizzle with melted chocolate and sprinkle with extra chopped pecans. Let the chocolate set before serving.

Notes

For a festive touch, consider adding a dash of cinnamon to the pecan filling.
