Ingredients
  

Marinade:

  • 1 cup Coca-Cola
  • 1/2 cup dark brown sugar
  • 1/4 cup soy sauce
  • 3 tablespoons oil
  • 3 tablespoons Worcestershire sauce
  • 2 tablespoons Dijon mustard
  • 1/3 cup ketchup
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon dry mustard
  • 2 cloves garlic minced
  • 1 teaspoon ginger
  • 1 teaspoon crushed thyme

Pork:

  • 5 pounds pork loin roast boned

Coca-Cola Sauce:

  • 2/3 cup Coca-Cola
  • 1 cup brown sugar
  • 1/3 cup balsamic vinegar
  • 2 tablespoons butter
  • 1 tablespoon cornstarch
  • 1/2 teaspoon dry mustard
  • Sea salt and fresh ground pepper to taste

Instructions
 

  • Prepare the Marinade: In a large bowl, combine all marinade ingredients. Place the pork loin in a large resealable bag, pour the marinade over it, seal, and refrigerate for at least 24 hours, turning occasionally.
  • Roast the Pork Loin: Preheat your oven to 325°F (165°C). Remove the pork loin from the marinade and place it on a roasting rack in a pan, fat side up. Insert a meat thermometer into the thickest part of the roast. Roast uncovered for 30-40 minutes per pound, or until the thermometer reads 175°F (80°C).
  • Prepare the Coca-Cola Sauce: While the pork is roasting, combine all sauce ingredients in a saucepan. Simmer and stir until the sauce thickens.
  • Finish the Roast: During the last 30 minutes of roasting, brush the pork loin with the Coca-Cola sauce. Once done, remove the roast from the oven, cover it with foil, and let it rest for 15 minutes before slicing.
  • Serve: Slice the pork loin and serve with the remaining Coca-Cola sauce on the side

Notes

For a spicier kick, add crushed red pepper flakes to the marinade. This dish pairs beautifully with mashed potatoes, green beans almondine, or cornbread.
