Ingredients
  

  • 1 1/2 tsp butter divided
  • 1/4 cup butter
  • 3 cups granulated sugar
  • 2/3 cup unsweetened cocoa powder
  • 1/8 tsp salt
  • 1 1/2 cups whole milk
  • 1 tsp vanilla extract

Instructions
 

  • Prepare the Pan: Line an 8-inch square baking pan with aluminum foil and grease with 1 1/2 teaspoons of butter.
  • Mix Ingredients: In a heavy saucepan, combine sugar, cocoa powder, and salt. Stir in the milk until smooth.
  • Boil Mixture: Over medium heat, bring the mixture to a boil, stirring constantly.
  • Cook to Soft-Ball Stage: Once boiling, stop stirring and cook until the mixture reaches 234°F (112°C) on a candy thermometer.
  • Add Butter and Vanilla: Remove from heat. Add the remaining butter and vanilla extract without stirring. Let cool to 110°F (43°C).
  • Beat the Mixture: Beat the mixture with a wooden spoon until thickened and the gloss fades.
  • Set the Fudge: Quickly spread into the prepared pan. Let cool completely before cutting into 1-inch squares.

Notes

For a nutty variation, fold in 1/2 cup of chopped walnuts during the beating stage.
