Instructions
In a medium mixing bowl, beat the softened cream cheese until fluffy.
Gradually add powdered sugar and mix until smooth.
Mix in the whipped topping until well combined and fluffy.
Gently fold in the drained crushed pineapple. Set aside.
Crush graham crackers into fine crumbs.
In a small bowl, combine crushed graham crackers, granulated sugar, and melted butter. Mix until the texture resembles wet sand.
Press the mixture firmly into the bottom of a 9x9-inch dish.
Spread the cream cheese and pineapple mixture evenly over the crust.
Sprinkle shredded coconut and diced pineapple evenly over the filling.
Refrigerate for at least 2 hours or until firm.
Notes
For extra crunch, toast the shredded coconut before sprinkling it on top.
