Ingredients
  

  • 1 package cream cheese 8 oz, softened
  • 1 cup powdered sugar
  • 1 cup crushed pineapple drained
  • 1 tub whipped topping 8 oz (e.g., Cool Whip)
  • 1/2 cup granulated sugar
  • 1/2 cup melted butter
  • 20 graham crackers crushed
  • 1/4 cup shredded coconut
  • 1/4 cup diced pineapple drained

Instructions
 

  • In a medium mixing bowl, beat the softened cream cheese until fluffy.
  • Gradually add powdered sugar and mix until smooth.
  • Mix in the whipped topping until well combined and fluffy.
  • Gently fold in the drained crushed pineapple. Set aside.
  • Crush graham crackers into fine crumbs.
  • In a small bowl, combine crushed graham crackers, granulated sugar, and melted butter. Mix until the texture resembles wet sand.
  • Press the mixture firmly into the bottom of a 9x9-inch dish.
  • Spread the cream cheese and pineapple mixture evenly over the crust.
  • Sprinkle shredded coconut and diced pineapple evenly over the filling.
  • Refrigerate for at least 2 hours or until firm.

Notes

For extra crunch, toast the shredded coconut before sprinkling it on top.
