Ingredients
  

  • 2 cups old-fashioned rolled oats gluten-free if needed
  • 1/2 cup unsalted butter
  • 1/2 cup granulated sugar
  • 1/3 cup unsweetened cocoa powder
  • 1/4 cup whole milk or dairy-free milk
  • 1/2 cup smooth peanut butter or almond butter
  • 1 teaspoon pure vanilla extract
  • Pinch fine sea salt

Instructions
 

  • Line a 9×9-inch baking pan with parchment paper, leaving an overhang for easy removal.
  • In a saucepan over low heat, melt butter, sugar, and cocoa powder together, stirring until smooth and glossy.
  • Remove from heat; whisk in milk, peanut butter, vanilla, and salt until fully combined.
  • Fold in oats until every flake is coated; the mixture should be thick and tacky.
  • Transfer to the lined pan and press firmly using a spatula or your fingers for an even layer.
  • Cover loosely and refrigerate for at least 45 minutes until bars are set.
  • Lift the block out by the parchment edges and slice into 12–16 squares with a sharp knife.
  • Let squares sit 5 minutes at room temperature before serving for perfect chewiness.

Notes

Pressing the mixture firmly helps the bars hold shape. For a crunchy top, sprinkle chopped nuts before chilling.
