Ingredients
  

  • 12 oz thinly sliced salami (Genoa or Calabrese)
  • 8 oz aged cheddar, cut into cubes
  • 6 oz Brie, quartered room temp for easy slicing
  • 4 oz Manchego or Asiago, sliced paper-thin use a mandoline or cheese slicer
  • 1 cup green grapes, halved seedless ideally
  • 1 cup red grapes, halved
  • 1/2 cup toasted pecans or Marcona almonds for crunch
  • 1/2 cup dried apricots, halved or swap for fresh figs in season
  • 1/4 cup green olives (Kalamata or Castelvetrano) for color pop
  • 1/4 cup fig jam or apricot preserves for that sweet contrast
  • 1 small bunch fresh herbs (rosemary sprigs or thyme)
  • Crackers and baguette slices (gluten-free if needed)
  • Extra-virgin olive oil and flaky sea salt for drizzling

Instructions
 

  • Use a wooden or slate board and spread a thin smear of fig jam in one corner as a sweet base.
  • Fold salami slices into roses and press onto the board, creating 8-10 roses.
  • Place cheddar cubes, Brie wedges, and Manchego slices in separate clusters around the salami roses.
  • Tuck grapes and dried apricots between cheese clusters.
  • Scatter pecans and olives to fill gaps on the board.
  • Nestle rosemary sprigs or thyme around the board for an elegant touch.
  • Just before serving, drizzle olive oil over cheeses and sprinkle with flaky sea salt.
  • Fan out crackers and baguette slices along one side for serving with olive tapenade or mustard.
