Ingredients
  

For the Crust:

  • 1 ½ cups graham cracker crumbs
  • ½ cup salted butter melted
  • 2 tbsp granulated sugar

For the Filling:

  • 1 can 14 oz sweetened condensed milk
  • 1 cup sweetened flaked coconut
  • ¼ cup fresh lemon juice
  • 1 can 20 oz crushed pineapple, well drained
  • 1 can 11 oz mandarin oranges, well drained
  • 1 cup chopped pecans
  • 1 container 8 oz Cool Whip

Instructions
 

  • Preheat your oven to 325°F (165°C). In a medium-sized bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Mix until the crumbs are evenly coated. Press this mixture firmly into the bottom and sides of a 9-inch deep-dish pie plate. Bake the crust for 10 minutes, then remove from the oven and let it cool completely.
  • For added flavor, toast 1/3 cup of the sweetened flaked coconut on a rimmed baking sheet in the preheated oven for 4-6 minutes, stirring once halfway through. Let it cool.
  • In a large mixing bowl, whisk together the sweetened condensed milk and lemon juice until well combined. Stir in the drained crushed pineapple, mandarin oranges, and chopped pecans (reserve some pecans for garnish). Gently fold in the Cool Whip and untoasted coconut until the mixture is smooth and fluffy.
  • Spoon the prepared filling into the cooled graham cracker crust, spreading it out evenly. Sprinkle the top with the toasted coconut and reserved pecans for garnish. Optionally, add maraschino cherries for a colorful touch.
  • Refrigerate the pie for at least 4 hours before serving to allow the filling to set. Slice and serve this decadent pie, and enjoy the creamy, tropical flavors.

Notes

For a nut-free version, simply omit the pecans. You can also experiment with different fruits or use dairy-free alternatives to make the pie suitable for various dietary needs.
