Ingredients
  

  • 4 boneless, skinless chicken breasts about 1½–1¾ lbs, patted dry
  • Salt and pepper to taste
  • 2 tablespoons olive oil extra-virgin recommended
  • 3 cloves garlic minced
  • 1 cup chicken broth low-sodium
  • 1/2 cup heavy cream (or half-and-half)
  • 1/2 cup sun-dried tomatoes oil-packed, chopped
  • 1/4 cup Parmesan cheese finely grated
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon red pepper flakes optional
  • 1/4 cup fresh basil chopped

Instructions
 

  • Season chicken breasts with salt and pepper. Heat olive oil in a large skillet over medium-high heat, then sear chicken 5–6 minutes per side until golden and cooked through. Transfer to a plate and tent with foil.
  • Reduce heat to medium. Add minced garlic and sauté 30 seconds. Pour in chicken broth and scrape up browned bits from the pan for extra flavor.
  • Stir in chopped sun-dried tomatoes and let them soften in the broth for about 2 minutes.
  • Whisk in heavy cream, grated Parmesan, Italian seasoning, and red pepper flakes. Heat until the cheese melts and the sauce simmers gently, about 2–3 minutes.
  • Return chicken breasts to the skillet, spoon sauce over them, cover, and simmer on low for 5 minutes so flavors meld.
  • Remove the lid, stir in chopped basil, and cook 1 more minute. Taste and adjust seasoning if needed, then serve garnished with extra Parmesan and basil leaves.

Notes

For lighter sauce, swap heavy cream for half-and-half. Leftovers keep well in the fridge up to 3 days; sauce thickens—add broth when reheating.
