Ingredients
  

  • ½ cup unsalted butter
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1 cup buttermilk
  • 1 teaspoon vanilla extract
  • 2 tablespoons lemon zest approximately from 2 lemons
  • 1 can 22 ounces lemon pie filling
  • ½ cup lemon curd

Instructions
 

  • Preheat oven to 350°F (175°C).
  • Melt ½ cup of unsalted butter in a microwave-safe bowl, then cool slightly.
  • Pour melted butter into a 9×9-inch baking dish, spreading it evenly.
  • In a large bowl, whisk together 1 cup flour and 1 cup sugar, then mix in 1 cup buttermilk, 1 teaspoon vanilla extract, and 2 tablespoons lemon zest until smooth.
  • Pour batter over the melted butter in the baking dish, spreading evenly.
  • In a small bowl, mix 1 can lemon pie filling with ½ cup lemon curd until well combined.
  • Gently pour the lemon mixture over the batter in the baking dish.
  • Bake for 55-60 minutes until the top is golden brown and a toothpick inserted into the center comes out clean.
  • Cool slightly before serving; garnish with powdered sugar or vanilla ice cream if desired.

Notes

You can substitute lime for lemon, use gluten-free flour, or make it dairy-free. Add berries or nuts for variations.
