Ingredients
  

  • 1 cup white chocolate chips: Provides the creamy base for the truffles.

Instructions
 

  • Place 1 cup white chocolate chips and 2 tablespoons unsalted butter in a heatproof bowl. Set aside.
  • In a small saucepan, gently heat 1/4 cup heavy cream over medium heat until it just begins to simmer. Do not let it boil.
  • Pour the hot cream over the chocolate chips and butter. Let it sit for 1 minute, then stir until smooth and glossy. If needed, use a double boiler method to fully melt the chocolate.
  • Stir in the zest from 2 lemons and 2 tablespoons of freshly squeezed lemon juice. For a vibrant color, add a few drops of yellow food coloring and mix until uniform.
  • Gradually mix in 2 cups of powdered sugar until the mixture is smooth and thickened.
  • Cover the bowl with plastic wrap and refrigerate for about 2 hours, or until the mixture is firm enough to handle.
  • Once firm, scoop small portions of the mixture and roll into bite-sized balls. Roll each truffle in powdered sugar to coat.
  • Place the truffles on a parchment-lined tray and refrigerate for at least 30 minutes to set.
