A savory and satisfying dish that combines classic taco flavors with layers of creamy cheese and tortillas. Perfect for a weeknight dinner or casual gathering, this casserole is a crowd-pleaser, with gooey cheese and a delicious taco filling.
In a large skillet, brown 1 lb of ground beef over medium-high heat, crumbling as it cooks for about 5-7 minutes. Drain any excess grease.
Add 1 packet of taco seasoning and 3/4 cup water. Stir and simmer until thickened, about 3-5 minutes. Stir in 1/2 cup salsa con queso and mix until well combined.
Preheat oven to 350°F (175°C). Spray an 8-inch round baking pan with nonstick cooking spray.
Place one flour tortilla at the bottom of the pan. Spread 1/3 of the taco filling over the tortilla, followed by 1/3 of the cheese. Repeat the layers two more times, finishing with a layer of cheese on top.
Bake in the preheated oven for 15-20 minutes, until cheese is melted and bubbly, and edges of tortillas are golden.
Allow the bake to cool for a few minutes before slicing. Serve with optional toppings like sour cream, guacamole, chopped tomatoes, lettuce, or jalapeños.
Notes
For added spice, use spicy salsa con queso or add diced jalapeños to the taco filling.
