Ingredients
  

  • 4 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp fine sea salt
  • 2 tbsp granulated sugar (omit for savory loaf)
  • 1 3/4 cups buttermilk well-stirred (sub: 1 3/4 cups milk + 1 tbsp lemon juice, rest 5 min)
  • 2 tbsp melted unsalted butter

Instructions
 

  • Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
  • In a large bowl, whisk together flour, baking soda, salt, and sugar (if using).
  • Pour in buttermilk and melted butter; stir gently until a shaggy dough forms.
  • Turn the dough onto a floured surface, knead lightly, shape into a round, and place on the prepared baking sheet. Brush the top with melted butter.
  • Bake for 25-30 minutes until golden and crusty. Let cool before slicing.

Notes

Optional add-ins: ½ cup currants or raisins, 1 cup cheddar cheese, 2 tbsp chopped chives. Freeze leftovers for up to 2 months.
