Ingredients
  

  • 2 pounds ground beef
  • 1 medium onion chopped
  • 2 medium carrots diced
  • 4 medium russet potatoes peeled and diced
  • 4 tablespoons tomato paste
  • 1 tablespoon onion powder
  • 1 tablespoon garlic powder
  • 1 teaspoon dried oregano
  • 2 beef bouillon cubes
  • 2 cups hot water
  • 4 drops Worcestershire sauce
  • Salt and pepper to taste

Instructions
 

  • Heat a large skillet over medium-high heat.
  • Add 2 pounds ground beef and cook until browned, breaking it apart with a spoon, about 7-10 minutes.
  • Drain any excess fat and transfer the cooked beef to your slow cooker.
  • While the beef is cooking, peel and dice 4 medium russet potatoes and 2 medium carrots.
  • Chop 1 medium onion finely.
  • Add the diced potatoes, carrots, and chopped onion to the slow cooker with the browned beef.
  • Sprinkle 1 tablespoon onion powder, 1 tablespoon garlic powder, and 1 teaspoon dried oregano over the ingredients in the slow cooker.
  • Stir gently to distribute the seasonings evenly.
  • In a separate bowl, mix 4 tablespoons tomato paste with 2 cups hot water.
  • Add 2 beef bouillon cubes and stir until dissolved.
  • Add 4 drops Worcestershire sauce and mix well.
  • Pour the tomato paste mixture over the ingredients in the slow cooker.
  • Gently stir to ensure everything is coated.
  • Set the slow cooker to low and cook for 7 hours. Alternatively, cook on high for 4 hours.
  • If you prefer a thicker stew, mix 2 tablespoons cornstarch with a small amount of water to create a slurry.
  • Stir this slurry into the stew about 30 minutes before the end of cooking.
  • Once cooking is complete, stir the stew and adjust seasoning with salt and pepper if needed.
  • Serve hot, paired with crusty bread or over rice.

Notes

Customize with additional vegetables like green beans or peas, and substitute the beef with ground turkey or chicken for a leaner option.
