Instructions
 

  • Preheat your oven to 375°F (190°C).
  • In a large mixing bowl, combine 4 boneless, skinless chicken breasts with 2 cloves of finely chopped garlic, 1 teaspoon paprika, 1 teaspoon dried oregano, salt, and pepper to taste; drizzle with 3 tablespoons olive oil and toss until evenly coated.
  • Add the sliced red, yellow, and green bell peppers to the bowl, tossing to coat with the seasoning and oil.
  • Transfer the chicken and pepper mixture to a 9x13-inch casserole dish, spreading everything out evenly.
  • Sprinkle 1 cup shredded cheddar cheese and 1/2 cup grated Parmesan cheese over the chicken and peppers.
  • Bake in the preheated oven for 25-30 minutes until the chicken reaches an internal temperature of 165°F (74°C) and the cheese is melted and golden.
  • Garnish with freshly chopped parsley and serve hot.
