Ingredients
  

  • 3 ripe bananas, mashed about 1 ½ cups
  • 2 large eggs or flax eggs for vegan: 2 Tbsp ground flax + 6 Tbsp water
  • 1/3 cup pure maple syrup or honey sub almond butter for nut-free twist
  • 1/4 cup plain Greek yogurt or coconut yogurt for dairy-free
  • 2 Tbsp coconut oil, melted or avocado oil
  • 1 tsp pure vanilla extract
  • 1 ½ cups whole wheat flour or 1:1 gluten-free flour blend
  • 1 tsp baking soda
  • 1/2 tsp fine sea salt
  • 1/2 tsp ground cinnamon
  • Optional: ½ cup dark chocolate chips or chopped walnuts

Instructions
 

  • Preheat your oven to 350°F (175°C) and line a 9×5-inch loaf pan with parchment paper.
  • In a large bowl, mash bananas with a fork until mostly smooth—leave a few little lumps for texture.
  • Whisk in eggs (or flax eggs), maple syrup, Greek yogurt, melted coconut oil, and vanilla extract until creamy.
  • In a separate bowl, stir together flour, baking soda, salt, and cinnamon.
  • Gently fold the dry mix into the wet ingredients, taking care not to overmix. Add chocolate chips or walnuts if desired.
  • Pour batter into the prepared pan, smooth the top, and bake for 45–50 minutes until a toothpick inserted in the center comes out clean.
  • Cool in the pan for 10 minutes, then transfer to a wire rack to rest for another 15 minutes before slicing.

Notes

Choose bananas with deeply speckled skins for maximum sweetness. Bob’s Red Mill oat flour is great for a gluten-free option. Room temperature eggs help create a fluffier crumb.
