Ingredients
  

  • 1 pound lean ground beef
  • 6 ounces cream cheese
  • 3 eggs
  • 5 cups sliced mushrooms
  • 2 tablespoons butter
  • 1 teaspoon dried parsley
  • Salt and pepper to taste
  • Grated cheese of your choice optional

Instructions
 

  • Preheat your oven to 350°F (175°C). Grease a casserole dish.
  • In a large skillet, cook the ground beef over medium heat until browned, about 7-10 minutes. Season with salt and pepper. Set aside.
  • In a food processor, blend the cream cheese until smooth. Add eggs one at a time, blending until creamy.
  • Pour the cream cheese mixture over the ground beef in the skillet. Stir to coat evenly.
  • In the same skillet, melt butter over medium heat. Add mushrooms and cook until golden brown, about 5-7 minutes. Season with salt, pepper, and parsley.
  • Transfer the beef mixture to the casserole dish. Top with sautéed mushrooms. Sprinkle grated cheese if desired.
  • Bake in the oven for 20-25 minutes until set and lightly browned.
  • Allow to cool slightly before serving. Enjoy with a green salad or steamed vegetables.

Notes

For extra flavor, add minced garlic while cooking the mushrooms, or try a mix of cheeses for a richer taste.
