Ingredients
  

  • 1 lb lean ground beef 90/10 or 85/15
  • 1 tbsp olive oil optional for extra browning
  • 1 medium onion finely chopped (yellow or sweet)
  • 2 cloves garlic minced (or 1 tsp garlic powder)
  • 1 tsp smoked paprika adds a cozy, smoky note
  • 1/2 tsp dried oregano or Italian seasoning blend
  • 1 can diced tomatoes undrained (fire-roasted if desired)
  • 2 cups beef or chicken broth low-sodium recommended
  • 1 cup water
  • 2 cups uncooked pasta shapes shells, elbows, or rotini
  • 1 cup shredded cheddar cheese sharp or mild
  • 1/2 cup shredded Monterey Jack or Colby Jack for extra melt
  • Salt & pepper to taste
  • Fresh parsley or chives chopped (optional garnish)

Instructions
 

  • Heat olive oil in a large skillet over medium-high heat. Add ground beef and season with salt, pepper, smoked paprika, and oregano. Cook until no pink remains.
  • Cook chopped onion and garlic until onion is translucent and fragrant.
  • Pour in diced tomatoes, broth, and water. Bring to a boil.
  • Stir in uncooked pasta shapes. Cover and let simmer for 12–15 minutes, stirring occasionally.
  • Sprinkle shredded cheddar and Monterey Jack over the top. Allow cheese to melt.
  • Adjust seasoning if needed. Garnish with fresh parsley or chives. Serve hot.

Notes

For richer flavor, choose grass-fed beef and real, full-fat cheese. If dairy-free, try vegan cheddar shreds and almond milk for a lighter twist. If mixture gets too thick, add a splash of broth or water. For a creamier texture, stir in a dollop of sour cream or Greek yogurt.
