  • 2 cups ham broth or chicken broth Base of the soup, adds savory flavor
  • 2 cups milk For a creamy texture
  • 1 1/2 pounds potatoes diced small (Optionally peeled; provides bulk and heartiness)
  • 8 ounces ham diced (Savory and salty, adds protein)
  • 1 cup corn Sweetness and texture
  • Salt and pepper to taste Seasoning

Instructions
 

  • Heat the oil in a large saucepan over medium-high heat. Add the diced onions, carrots, and celery. Cook until tender, about 8-10 minutes.
  • Mix in the garlic, thyme, and flour. Cook until the flour is lightly browned, approximately 2-3 minutes.
  • Gradually stir in the broth, deglazing the pan as you go. Add the milk and potatoes, bring to a boil, then reduce the heat and simmer until the potatoes are tender, around 10-12 minutes.
  • Add the ham and corn. Cook until heated through, and season with salt and pepper to taste.
  • Serve hot, garnished with fresh parsley if desired. Pair with crusty bread for a complete meal.

Notes

This chowder can easily be adapted to suit vegetarian, gluten-free, dairy-free, or low-carb diets. Add some cheese or spice it up with jalapeños for a variation. Pair with crusty bread for a complete meal.
